My New Feature... Recipes!

As I mentioned before I am on my own, this means teaching myself how to cook... and Robert being a guinee pig haha... so I thought I'd share the recipies I am trying on my blog so that I have a place to go back to if we like them.... Todays recipe is a copy cat of Zuppa Tuscana from the Olive Garden.. (my dad's favorite) Feel free to try it along with me.


Zuppa Tuscana


5 1/2 cups Chicken Stock
1/2 cup Heavy Cream (you can also substitute this with Evaporated Milk)
4 cups chopped Kale
2 Medium Russet Potatoes
1 lb Spicy Italian Sausage
1/4 tsp Salt
1/3 tsp crushed red pepper flakes

Saute Sausage in sauce pan. Combine stock and cream over med heat. Slice potatoes into 1/4 inch slices and add to soup along with sausage and kale. Add spices and let simmer for 1 hr stirring occasionally. (do not let boil, this will cause the cream to curdle.)
